A nutritious dessert
One of the great things about eating a plant based diet is that it is nutrient dense – much more so than similar dishes made with animal products. For example, these vegan chocolate pots packed full of ingredients that might be referred to as “super foods”. All anyone really means when they call something a “super food” is that it is packed full of vitamins and other nutrients.
These Vegan Chocolate Pots are made from avocado, cocoa powder and maple syrup that are all blended together and then topped with blueberries and pistachio.
You might be thinking “hang on a second, they are all ingredients that are high in calories” and you’d be right. Super foods aren’t necessary low in calories. It’s just that they have high levels of the good stuff!
What makes these ingredients super foods?
Let’s look at each of them in turn:
Avocado
Avocados are packed full of vitamins and nutrients. They also contains a high amount of monounsaturated fat. But, don’t be fooled. These fats are good fats which helps to protect your cardiovascular system. So even though they are high in calories they are still nutritious!
Dark chocolate
We’ve known for years that dark chocolate is good for us thanks to all of the antioxidants it contains. I’ve even seen some nutritionists claim that its better for you than green tea or wine when we consider just the levels of antioxidants in each.
Maple syrup
When people think of “healthy sugar” they often think of honey. But, did you know that maple syrup has the same antioxidant and anti-inflammatory properties as green tea! Now which natural sugar is the real “super food”?
Blueberries
Despite their tiny size, blueberries are full of antioxidants. Some science journals have said that blueberries can lower your risk of heart disease and cancer – two of the major killers in this day and age. But, other berries are full of antioxidants too! So you can add your favourite berries to the top of these Vegan Chocolate Pots. Choose something in season if you can, they all taste delicious!
Pistachios
Did you know that pistachios are rich in vitamin B6 which is needed for regulating blood sugar levels. It also helps us make hemoglobin (which transports oxygen in our blood). They’re also a great source of potassium. I think they deserve to be called super, don’t you?
All fruits and vegetables are super in their own way and can be enjoyed as part of a healthy diet! Feel free to swap our the berries or nuts for your favourites / whatever you have in the cupboard!
The secret to silky smooth chocolate pots
You’ve probably guessed by now that the secret to silky smooth chocolate pots is avocado! When whizzed together with the other ingredients it becomes glossy and creamy. The perfect thick, luscious texture for a vegan mousse!
I’ve listed a food processor in the equipment section below but any blender will do. At a push you can mash or use an electric whisk. If you decide to mash the avocados, push the pureed avocado through a fine sieve to get it extra smooth.
The recipe
Vegan Chocolate Pots
Ingredients
- 1 large avocado ripe, peeled and stone removed
- 4 tbsp maple syrup
- 2 tbsp raw cocoa powder
- 4 tbsp blueberries
- 2 tbsp pistachios roughly chopped
Instructions
- Roughly mash the avocados before placing into a food processor along with the maple syrup and the cocoa powder.
- Begin by blitzing on a low speed until the ingredients start to come together.
- Turn the food processor up high and process until the mix is creamy and completely smooth. (Add extra maple syrup as desired).
- Divide the mixture between two glasses or ramekins and top with the blueberries and the chopped pistachio nuts immediately before serving.

This mousse tastes best chilled. Make it in advance and keep in the fridge only topping with the fruit and nuts when ready to serve.
