Vegan Caramelised Apple Crêpes taste just like apple pie! With a good sprinkling of cinnamon they are a delicious warming dish that's perfect for a decadent brunch or even dessert.

Crêpes for dessert

Crêpes are a very thin pancake that can be served with sweet or savoury fillings.

They are perhaps best known for the dish crêpes Suzette where they are flambéed in a sauce made of sauce of sugar and butter, as well as tangerine or orange juice. 

This recipe takes another type of caramelised fruit - apples - and turns them into another iconic dessert! My classic vegan crêpe recipe is topped with sweet and sticky wedges or caramelised apple and served with either vegan vanilla ice cream or plant based whipped cream to finish.

They make a delicious dessert or a really decadent brunch dish!

Vegan Caramelised Apple Crepes served with ice cream

Ingredients

The crêpe batter requires just 6 ingredients, all of which you should have in your cupboards and fridge:

  • plain flour
  • baking powder
  • caster sugar
  • soy milk (or another plant milk)
  • vanilla extract
  • vegan butter (spreadable or block butter is fine)

You will also need a little vegetable oil to stop them sticking in the pan.

To top your crêpes you need to make sweet and sticky caramelised apples. You'll need just four ingredients:

  1. apples
  2. vegan butter (again spreadable or block butter is fine)
  3. maple syrup (or another liquid sugar like agave syrup)
  4. ground cinnamon.

Step-by-step Instructions

How to caramelise apple wedges

The topping for these crepes is caramelised apple wedges. I'd suggest making these first then doing the batter.

  • Core the apples and cut into wedges
  • Melt the butter in a pan over a medium heat until it starts foaming
  • Add the apple wedges and season with the cinnamon
  • Cook for about 5 minutes until the apples are starting to brown
  • Add the maple syrup and cook for another couple of minutes until the apple wedges are syrupy

How to make crêpes

Crêpes are a very thin pancake made from a runny batter. To make and cook this batter you need to follow a few simple steps.

  • Mix the dry ingredients in a bowl and mix the wet ingredients in a jug.
  • Slowly pour the wet ingredients into the dry ingredients, whisking constantly to avoid the formation of any lumps.
  • Heat an oiled pan until very hot.
  • Pour some of the batter into the pan and swirl until you have a circle.
  • Cook for just 1 - 2 minutes or until golden brown.
  • Flip and cook for another 30 seconds.
  • Repeat with the rest of the batter.

Serving suggestions

My favourite way to serve these crêpes is with a good scoop of vanilla ice cream (vegan of course) but whipped cream or even squirty cream works perfectly. You want something rich and creamy to contrast with the apples.

Top tips

This recipe is incredibly simple but there are some tips and tricks that will make sure you have perfect crêpes every time. They are:

  • Use a crêpe pan - crêpe pans are a specilist piece of cookware used just for making these delicate pancakes. They are non-stick cast iron pans that have low sides making it easier to flip the crêpe.
  • Add the milk slowly for silky smooth batter - the last thing you want is lumps in your batter. To avoid this you should drizzle the milk into the flour slowly, constantly whisking. This will make a paste which will then get thinner and thinner making the perfect batter.
  • Leave the batter to rest - letting the batter rest for just 30 minutes results in a much lighter crêpe.
  • Don't add too much oil to the pan - you might be worried about your crêpes sticking but too much fat will make them greasy.
  • Cook on a medium-high heat - getting the temperature right is not always easy. You want it to be medium high as if its too low they're more likely to stick to the pan but if its too high then it will cook to fast leaving them uneven and not perfect circles if you don't get the opportunity to swirl them properly in the pan. If you can swirl the batter easily you know you've got the temperature spot on. They'll also flip easily.

FAQ

What type of apples should I use?

We want the apples to keep their shape so choose eating apples which retain some bite when cooked. Eating apples go to mush and are better in pies or a crumble.

Do I need to buy a crêpe pan?

No, any flat bottomed frying pan will do. Pick one that's non-stick to avoid the crêpe sticking.

Ingredients
  

For the caramelised apple wedges

  • 1 tablespoon vegan butter
  • 2 apples cored and cut into wedges
  • 1 pinch cinnamon
  • 2 tablespoon maple syrup

For the pancake batter

  • 200 g plain flour
  • 1 teaspoon baking powder
  • 2 teaspoon caster sugar
  • 425 ml soy milk
  • 1 teaspoon vanilla extract
  • 15 g vegan butter
  • 1 tablespoon vegetable oil for cooking

Instructions
 

To make the caramelised apple wedges

  • Melt the butter in a non-stick frying pan set over a medium heat.
  • Once the butter starts foaming, add the apple wedges and season with the cinnamon.
  • Cook, stirring, for 5 minutes until the apple wedges start to brown.
  • Add the maple syrup and swirl.
  • Cook on a low heat until they are sweet and syrupy.

To make the pancakes (while the apples are cooking)

  • In a large mixing bowl, combine the flour, baking powder and sugar.
  • In a separate jug, mix the soy milk, vanilla extract and melted butter.
  • Slowly pour these wet ingredients into the flour, first to create a paste and then adding slowly to make a smooth, thin batter.
  • Once all of the ingredients are combined mix well to ensure the batter is completely smooth and to create little air bubbles.
  • Brush your pan with a little oil and then heat on a medium heat.
  • Hold your hand a few centimetres away from the pan to see if it is hot. Once you can feel the heat, pour over some of the batter and swirl it around the pan until you have a thin circle.
  • Cook until the underside is golden underneath then flip it to cook it on the other side.
  • Serve immediately with the caramelised apple wedges.
