Christmas wouldn’t be Christmas without spending time in the kitchen whipping up festive cakes, cookies, tarts and pies! Today we’re making a vegan Cranberry and Pecan Banana Bread.
What makes this a Christmas cake? Well the festive flavours of course! I’ve taken my basic vegan banana bread recipe and added fresh cranberries, pecans and winter spices to make it perfect for the Christmas season.
How to make a Vegan Cranberry and Pecan Banana Bread
In essence, this recipe is a case of mashing up some bananas, chucking all the ingredients together into a bowl and giving them a good stir. It’s so simple that it is the perfect recipe for making with little ones during the holidays.
I do, however, have just a few tips for making sure you make the perfect cake every time.
Mash your bananas
The first step in this recipe is to mash the bananas. You don’t want to leave them chunky. If you do the loaf cake will end up quite dense. Instead, mash until there are just a few lumps remaining. They will become quite runny once you add the sugar and oil but hopefully not too dissimilar to the texture of whisked egg which they are replacing.
Combine your dry ingredients
Once you’ve dealt with the wet ingredients, it’s time to turn to the dry ingredients. In a bowl, mix together the flour, baking powder and cinnamon. Next add the fruit and nuts and toss them together.
It’s important to toss the pecans and cranberries in the flour before adding them to the wet ingredients as this stops them from sinking to the bottom of the loaf cake when it bakes.
Stir the batter
All that’s left to do is mix your wet ingredients into your dry ingredients. You don’t need to use any fancy techniques here. Just stir them together until there are no lumps of flour remaining. Pour into a lined loaf tin and bake.
Bake!
The cake will bake for 40 minutes in a hot oven. You’ll know when it’s done as it will be golden brown and a skewer poked into the centre will come out clean.
The recipe
Vegan Cranberry and Pecan Banana Bread
Equipment
- 1 Loaf tin
Ingredients
- 3 overripe bananas
- 75 ml flavourless oil e.g. vegetable oil
- 100 g light brown sugar
- 250 g plain flour
- 3 tsp baking powder
- 1 tbsp cinnamon
- 100 g cranberries fresh or frozen
- 75 g pecans roughly chopped
- 6 tbsp icing sugar
- 3 tbsp water
Instructions
- Line a loaf tin with grease proof paper.
- Pre-heat your oven to 200C/ 392F /gas 6.
- In a large bowl mash together the bananas using a fork until there are few lumps remaining.
- Whisk in the oil and light brown sugar until well combined.
- In a separate bowl sift together the flour, baking powder and cinnamon.
- Add the cranberries and pecans and toss until coated in flour.
- Mix together with the wet ingredients until well combined.
- Spoon the batter into your loaf tin and bake for 40 minutes.
- Remove from the loaf tin and place on a wire rack to cool.
- In the meantime, mix together the icing sugar and water until you have a smooth, runny icing.
- Drizzle over the warm loaf and serve.
