Whipped Tofu “Feta” with roasted tomatoes
I've taken your average block of tofu and turned it into creamy Whipped Tofu "Feta" with juicy roasted tomatoes and garlic. The whipped Tofu Feta is super smooth and perfect for dipping or spreading.

For the Whipped Tofu "Feta"
- 350 g firm tofu
- 1 lemon juice only
- 3 tablespoon nutritional yeast
- 1 teaspoon salt
- 1 teaspoon garlic granules (not to be confused with garlic salt)
- 2 tablespoon olive oil
For the roasted tomatoes
- 250 g cherry tomatoes
- 4 cloves garlic
- 2 tablespoon olive oil
- salt and pepper to taste
Add the tomatoes and garlic to a roasting tin and drizzle over the olive oil. Season with a little salt and pepper then roast for 30 minutes at 200C/400F/gas mark 6 until the tomatoes are just bursting and the garlic is soft.
In the meantime, place all of the ingredients for the whipped tofu "feta" into your blender and blitz on high until smooth and creamy.
Serve the roasted tomatoes and garlic on top of the whipped tofu "feta" and serve with sourdough toast.
