- 235 g chickpeas from a 400g tin, drained and rinsed
- 0.5 red onion finely diced
- 1 tablespoon capers finely diced
- 1 sheet nori cut into short, thin strips
- 198 g sweetcorn
- 2 tablespoon vegan mayonnaise
- salt and pepper to taste
- 4 leaves gem lettuce
- 4 slices bread
Begin by mashing the chickpeas until they are flaky.
Add in the red onion, capers, nori, sweetcorn and mayonnaise.
Mix the sandwich filling ingredients well then season to taste.
Spread half over one slice of bread then top with 2 of the gem lettuce leaves, followed by the second slice of bread. Repeat with the second sandwich.
Cut in half and serve.
