- 280 g sun-dried tomatoes from a jar, packed in oil
- 75 g vegan cheese grated
- 500 g vegan puff pastry ready rolled
Remove tomatoes from the oil and pat with kitchen roll to soak up the excess oil.
Chop the tomatoes until it is almost at a chunky paste consistency.
Place in a bowl and toss with the grated vegan cheese.
Unroll the sheet of pastry and spread over the tomato and cheese mix then fold in half.
On a lightly floured surface roll out until roughly 0.5 cm thick.
Cut into 1cm strips, then twist the strips 3-4 times.
Lay on a baking sheet and bake for 15 mins, or until golden brown.
