Vegan French Toast
Vegan French Toast is a delicious, decadent breakfast that is perfect served with fresh berries, whipped cream and maple syrup.

- 2 tablespoon cornflour
- 1 tablespoon chickpea flour
- 2 teaspoon cinnamon
- 1 teaspoon vanilla paste
- 1 tablespoon golden caster sugar
- 250 ml plant milk
- 8 slices thick white bread
- vegetable oil for frying
Add the cornflour and chickpea flour to a dish along with the cinnamon, vanilla and caster sugar.
Slowly whilst in the plant milk until you have a smooth custard.
Heat a little oil in a frying pan.
Dip your first slice of bread into the custard mix; let any excess drip off back into the pan.
Fry the bread for 2 - 3 minutes until it is brown and crisp at the edges then flip and cook for another 2 - 3 minutes.
Keep the slices warm in a low oven as you cook the rest.
Serve with your choice of toppings.
