Vegan Blackberry Fool
This Vegan Blackberry Fool, made from foraged blackberries, is sweet and creamy. It's the perfect late summer dessert.

- 200 g blackberries fresh or frozen
- 0.5 lemon juice and zest
- 3 tablespoon caster sugar
- 250 ml vegan double cream
- 3 tablespoon icing sugar
- 0.5 teaspoon vanilla paste
Add the blackberries (except 2 or 3 for garnish), lemon juice and caster sugar to a saucepan and heat over a medium heat.
Bring to a simmer and cook for 15 minutes until the blackberries have broken down and formed a syrup.
Leave to cool.
In the meantime, whisk the vegan cream and icing sugar until it has formed stiff peaks.
Layer the blackberry syrup and whipped cream in glasses or dessert dishes.
Top with the remaining blackberries and lemon zest.
