Spiced Berry Porridge
Snuggle up on Christmas morning with a steaming, creamy bowl of spiced berry porridge.

For the compote
- 100 g mixed berries
- 1 tablespoon orange juice
- ¼ teaspoon cinnamon
- 1 star anise
For the porridge
- 50 g jumbo oats
- 300 ml milk
- 1 pinch salt
To make the compote
Add the fruit, orange juice, sugar and spices to a saucepan and place on a medium heat.
Stir until the sugar has dissolved.
Turn the heat up high until the liquid starts to simmer, stirring regularly until the berries start to burst.
Place to one side while you make the porridge.
To make on the hob
Add the oats to a saucepan along with the milk and salt.
Bring to the boil and simmer for 4-5 minutes, stirring regularly to make sure it doesn't stick to the bottom of the pan and to help the oats break down.
To make in the microwave
Mix the porridge oats, milk or water and a pinch of salt in a deep microwaveable bowl.
Microwave on 'high' for 2 and a half minutes.
Remove the porridge from the microwave and stir well.
Place back in the microwave and heat on 'high' for another 2 minutes.
Let the porridge stand for a minute before serving.
