Vegan Smoked Salmon

- 3 large carrots peeled
- 1 teaspoon sea salt
For the marinade
- 150 ml hot water
- 1 tablespoon dried seaweed flakes
- 3 tablespoon caper brine
- 2 tablespoon lemon juice
- 1 tablespoon white miso paste
- 3 tablespoon soy sauce
- 50 ml vegetable oil
Bring a pan of salted water to a boil and add the carrots.
Cook for 10 minutes until tender (not soft).
While the carrots cook combine the marinade ingredients and whisk well.
Once cooked. Immediately place the carrots in cold water to rapidly cool them.
When cool, pat dry before cutting into long, thin strips.
Cover the carrot strips in the marinade and leave to sit for 3 hours or ideally overnight in the fridge.
Bring to room temperature before serving.
