Salt and Pepper Tofu
Salt and pepper tofu is a simple Chinese dish that is full of flavour thanks to the fiery salt and pepper seasoning.

- 1 red pepper
- 400 g tofu firm or extra firm
- 1 teaspoon salt
- 0.5 teaspoon white pepper
- 0.5 teaspoon black peppercorns
- 0.5 teaspoon Sichuan peppercorns
- 5 tablespoon cornflour or potato starch or tapioca starch
- 4 spring onions
- coriander
Cut the red pepper into strips.
Add a little vegetable oil to a heavy bottomed frying pan and heat on high.
Once the oil is hot add the red pepper to the pan and stir fry for 5 minutes or until softened.
Remove from the pan and place to one side.
Place the spices into a spice grinder or blender and blitz until a powder.
Mix together the spices and cornflour.
Cut the tofu into cubes then toss in the cornflour/spice mix.
Add a little more vegetable oil to your frying pan and again place over a high heat.
Place the tofu squares into the pan and fry for 5 - 8 minutes or until crispy.
Flip them over and fry for another 5 - 8 minutes or until the second side is also crispy.
Add the red peppers back into the pan and toss through until hot again.
Serve with thinly sliced spring onions and a scattering of coriander leaves.
