- 16 new potatoes or similar small potato
- 16 padron peppers
- coarse sea salt
- 2 tablespoon olive oil
Cut the potatoes in half and add to a pan of boiling water.
Cook the potatoes for 15 minutes over a medium heat until they are just tender before draining and patting dry.
Thread the potato halves and padron peppers on to skewers (8 in total).
Brush the skewers with a little olive oil then place over the direct heat of a BBQ for 2-3 minutes on each side before transferring to an indirect heat and cooking for an additional 5 - 10 minutes.
Serve with a sprinkling of sea salt alongside your favourite BBQ dishes.
