- 2 avocados ripe
- 5 tablespoon sour cream
- 2 limes juice only
- 1 pinch salt
- 1 pinch ground black pepper
- 2 carrots julienned
- 0.5 red cabbage thinly sliced
- 0.5 white cabbage thinly sliced
- 1 bunch coriander roughly chopped, including stalks
In a small food processor, blitz together the avocado, sour cream and lime juice.
In a bowl, toss the carrot, cabbage and coriander with the salt and pepper.
Stir through the avocado and sour cream mix.
