- 240 grams chickpeas cooked, drained weight
- 20 cherry tomatoes quartered
- 2 small peppers diced
- ½ large cucumber diced
- 4 spring onions sliced
- 1 large bunch coriander finely chopped
- 2 tablespoon curry leaves finely chopped
- 1 teaspoon chilli flakes
- 4 tablespoon lemon juice
- 2 tablespoon flax seeds
- salt to taste
- ground pepper to taste
In a large bowl, combine the ingredients and toss together until all are coated in the spices and lemon juice.
Serve alongside onion bhajis or tandoori grilled meats.
