- 800 g tomatoes
- 3 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- ½ teaspoon sea salt
- 2 tablespoons fresh parsley finely chopped
- 1 lemon zest only
- 1 handful fresh basil leaves
