Greek Mushrooms Gyros
This Vegan Gyros is made with roasted oyster mushrooms and all the trimmings, including a vegan tzatziki!

For the vegan gyros
- 250 g oyster mushrooms
- 2 tablespoon olive oil
- 1.5 tablespoon oregano
- 1 teaspoon paprika
- 0.5 teaspoon cumin
- 0.25 lemon juice only
- 8 cherry tomatoes halved
- 0.5 small red onion thinly sliced
- 2 inch cucumber thinly sliced
- 2 pita bread
For the vegan tzatziki
- 4 tablespoon vegan Greek yogurt
- 2 inch cucumber grated
- 1 clove garlic minced
- 0.25 lemon juice only
- 1 teaspoon dried mint
- 1 pinch salt
For the gyros
Pre-heat your oven to 180 C / 356 F / gas mark 4.
Rub the oyster mushrooms with the olive oil and slices.
Place in a roasting tin and put into the centre of the oven for 20 minutes or until they have become brown and crispy around the edges.
Stuff the mushrooms inside the pita along with the salad vegetables.
Squeeze over the lemon juice.
