Greek Mushrooms Gyros

This Vegan Gyros is made with roasted oyster mushrooms and all the trimmings, including a vegan tzatziki!

Ingredients

For the vegan gyros

  • 250 g oyster mushrooms
  • 2 tablespoon olive oil
  • 1.5 tablespoon oregano
  • 1 teaspoon paprika
  • 0.5 teaspoon cumin
  • 0.25 lemon juice only
  • 8 cherry tomatoes halved
  • 0.5 small red onion thinly sliced
  • 2 inch cucumber thinly sliced
  • 2 pita bread

For the vegan tzatziki

  • 4 tablespoon vegan Greek yogurt
  • 2 inch cucumber grated
  • 1 clove garlic minced
  • 0.25 lemon juice only
  • 1 teaspoon dried mint
  • 1 pinch salt

Instructions

For the gyros

  • Pre-heat your oven to 180 C / 356 F / gas mark 4.
  • Rub the oyster mushrooms with the olive oil and slices.
  • Place in a roasting tin and put into the centre of the oven for 20 minutes or until they have become brown and crispy around the edges.
  • Stuff the mushrooms inside the pita along with the salad vegetables.
  • Squeeze over the lemon juice.

For the tzatziki

  • Stir together the tzatziki ingredients then spoon over the gyros.
