Ingredients

  • 150 g pasta
  • 240 g chickpeas drained weight
  • 4 tbsp capers
  • 100 g Kalamata olives drained weight
  • 10 cherry tomatoes quartered
  • 1 red pepper diced
  • 0.5 small red onion finely diced
  • 1 lemon juice only
  • 6 tbsp olive oil
  • 1 bunch parsley finely chopped

Instructions

  • Cook the pasta according to the packets instructions (roughly 10 minutes) then run under cold water to cool.
  • Add the remaining ingredients to the cooled pasta and toss.
  • Serve cold.
