Vegan Waldorf Salad

This Vegan Waldorf Salad makes a perfect light lunch or side salad for a larger meal. It's packed full of fruits, veggies and nuts making for a well rounded dish.

Ingredients

For the salad

  • 75 g walnuts roughly chopped
  • 1 handful red grapes cut in half
  • 2 red apples cored and thinly sliced
  • 2 celery sticks sliced

For the dressing

  • 150 g vegan mayonnaise
  • 1 shallot finely diced
  • 1 lemon juice and zest
  • 1 tsp tarragon finely chopped
  • salt and pepper

Instructions

  • Toast the walnuts in a dry frying pan until fragrant, then set aside to cool.
  • Add the toasted walnuts to a bowl along with the grapes and apple slices and toss together.
  • Lay the lettuce leaves out over a large serving plate or on each plate if serving individual portions.
  • Scatter over the toasted walnuts, grapes and apple slices
  • Whisk together the mayonnaise, lemon juice and zest, tarragon and shallot then season with salt and pepper.
  • Drizzle the mayonnaise dressing over the salad and serve.
