Vegan Waldorf Salad
This Vegan Waldorf Salad makes a perfect light lunch or side salad for a larger meal. It's packed full of fruits, veggies and nuts making for a well rounded dish.

Ingredients
For the salad

g
walnuts
roughly chopped
1
handful red grapes
cut in half
2
red apples
cored and thinly sliced
2
celery sticks
sliced
For the dressing
150
g
vegan mayonnaise
1
shallot
finely diced
1
lemon
juice and zest
1
tsp
tarragon
finely chopped
salt and pepper
Instructions
Toast the walnuts in a dry frying pan until fragrant, then set aside to cool.
Add the toasted walnuts to a bowl along with the grapes and apple slices and toss together.
Lay the lettuce leaves out over a large serving plate or on each plate if serving individual portions.
Scatter over the toasted walnuts, grapes and apple slices
Whisk together the mayonnaise, lemon juice and zest, tarragon and shallot then season with salt and pepper.
Drizzle the mayonnaise dressing over the salad and serve.
