- 1 onion quartered
- 4 tomatoes quartered
- 5 cloves garlic
- 3 guajillo chillies dried, stems removed
- 200 ml vegetable stock
- 1 small bunch fresh coriander
- 1 pinch salt
Boil the onion, tomatoes, garic and guajillo chillies in the vegetable stock for 15 minutes.
Leave to cool before adding to your blender with the remaining ingredients.
Blitz on high until smooth. (Sieve if desired to get even smoother).
