Vegan Kimchi Fried Rice

Vegan Kimchi Fried Rice is packed full of flavour thanks to the fermented cabbage. Fried with vegetables and rice it makes for a really hearty dish.

Ingredients

  • 1 tbsp vegetable oil
  • 1 clove garlic minced
  • 0.5 inch root ginger minced
  • 75 g vegan lardons
  • 1 carrot peeled and diced
  • 1 yellow pepper diced
  • 150 g vegan kimchi roughly chopped
  • 50 g frozen peas
  • 400 g rice cooked
  • 1 tsp soy sauce
  • 2 spring onions thinly sliced

Instructions

  • Heat the oil in a frying pan or wok.
  • Add the garlic and ginger and cook for 30 seconds to just coat with the oil.
  • (If using add the vegan lardons and fry for 5 minutes).
  • Add the diced carrots and yellow pepper.
  • Cook for 4 - 5 minutes until soft.
  • Add in the green peas and kimchi and cook for 2 - 3 minutes.
  • Stir in the rice and fry for 5 - 8 minutes.
  • Season with the soy sauce as needed.
  • Serve with the spring onions.
