Vegan Greek Orzo Salad

Ingredients

  • 100 grams orzo
  • 0.5 red onion
  • 0.5 red pepper
  • 3 inch cucumber
  • 8 cherry tomatoes
  • 100 grams kalamata olives
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • salt and pepper to taste

Instructions

  • Cook the orzo according to the packet's instructions, usually 10 minutes.
  • Drain the orzo and leave to cool.
  • In the meantime finely dice the onions, red pepper and cucumber. Quarter the cherry tomatoes and halve the kalamata olives.
  • Add the vegetables to the orzo and combine.
  • Pour over the olive oil lemon juice and oregano and stir until all of the orzo and vegetables are coated.
  • Season to taste.
