Vegan Smoked Salmon

You can easily make Vegan Smoked Salmon by marinating thin strips of carrot. Let me show you how.

Ingredients

  • 3 large carrots peeled
  • 1 tsp sea salt

For the marinade

  • 150 ml hot water
  • 1 tbsp dried seaweed flakes
  • 3 tbsp caper brine
  • 2 tbsp lemon juice
  • 1 tbsp white miso paste
  • 3 tbsp soy sauce
  • 50 ml vegetable oil

Instructions

  • Bring a pan of salted water to a boil and add the carrots.
  • Cook for 10 minutes until tender (not soft).
  • While the carrots cook combine the marinade ingredients and whisk well.
  • Once cooked. Immediately place the carrots in cold water to rapidly cool them.
  • When cool, pat dry before cutting into long, thin strips.
  • Cover the carrot strips in the marinade and leave to sit for 3 hours or ideally overnight in the fridge.
  • Bring to room temperature before serving.
