- 1 head romaine lettuce shredded
- 0.5 small cucumber thinly sliced and cut in half
- 14 cherry tomatoes halved
- 1 large carrot peeled and julienne
- 0.5 large red onion thinly sliced
- 2 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
- 1 tsp sesame seeds
- 3 tbsp extra virgin olive oil
- 1 tbsp lemon juice freshly squeezed
- salt and pepper to taste
Combine all of the vegetables into a bowl along with the seeds.
In a separate bowl or jug, whisk together the extra virgin olive oil and lemon juice with a pinch of salt and pepper.
Once combined, pour the dressing over the vegetables and seeds.
Toss to ensure all of the vegetables are coated.
Serve immediately.
