Ingredients

  • 1 head romaine lettuce shredded
  • 0.5 small cucumber thinly sliced and cut in half
  • 14 cherry tomatoes halved
  • 1 large carrot peeled and julienne
  • 0.5 large red onion thinly sliced
  • 2 tbsp pumpkin seeds
  • 2 tbsp sunflower seeds
  • 1 tsp sesame seeds
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice freshly squeezed
  • salt and pepper to taste

Instructions

  • Combine all of the vegetables into a bowl along with the seeds.
  • In a separate bowl or jug, whisk together the extra virgin olive oil and lemon juice with a pinch of salt and pepper.
  • Once combined, pour the dressing over the vegetables and seeds.
  • Toss to ensure all of the vegetables are coated.
  • Serve immediately.
