Banana and Chia Seed Pudding

This simple Banana and Chia Seed Pudding is perfect for breakfast. Make it the night before and you will have a delicious meal ready for you when you wake up.

Ingredients

  • 2 bananas
  • 4 medjool dates pitted
  • 120 ml plant milk e.g. oat milk or almond milk
  • 40 grams ground almonds
  • 1 tbsp chia seeds

Instructions

  • Add 1 of the bananas, 2 of the dates, ground almonds and plant milk into a food processor and and blitz until smooth.
  • Add the chia seeds and mix well, ensuring all of the chia seeds are covered in the banana mix.
  • Spoon the banana, date and chia seed pudding into two bowls or glasses and leave for at least 1 hour or overnight.
  • Before serving, slice the banana and the remaining dates. Add these to the top of the pudding and enjoy!
