BBQ Lemon and Rosemary Salmon Skewers

These salmon skewers have been flavoured with lemon and rosemary for a fresh, healthy BBQ dish.

  • 2 tsp olive oil
  • 1 tsp rosemary fresh, finely diced
  • 1 tsp lemon zest finely grated
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 fillet salmon skinned, cut into 1 inch cubes
  • 4 cherry tomatoes
  • 1/4 yellow pepper cut into 1 inch pieces
  • 1-2 bamboo skewers
  • 1/2 lemon
  1. Prepare your BBQ and wait until the coals are white hot.

  2. Combine the oil, rosemary, lemon zest, salt and pepper in a bowl. 

  3. Add the salmon, cherry tomatoes and yellow pepper pieces.

  4. Ensure the salmon, cherry tomatoes and yellow pepper and coated in the flavoured oil before threading on to the bamboo skewer(s).

  5. Place the salmon skewers directly onto the BBQ grill along with the half a lemon (cut side down)

  6. Grill the salmon for 4-6 minutes turning just once.

  7. Serve immediately with a squeeze of the BBQd lemon.
