Halloumi Sandwich with Avocado, Pea and Mint Pesto

This Halloumi Sandwich with Avocado, Pea and Mint Pesto is a delicious summer lunch!

Ingredients

  • 2 ciabatta rolls
  • 250 g halloumi
  • 1 avocado
  • 1 cup peas
  • 1 bunch mint
  • 1 lemon juice
  • 1 cup spinach

Instructions

  • If using fresh rather than frozen peas, fill a small pan with boiling water and cook until the peas are soft.
  • Place the peas, avocado, lemon juice and mint into a food processor and pulse until a course paste has formed.
  • Slice the halloumi into roughly 6 pieces and griddle on a high heat for 3 minutes on each side or until golden griddle marks appear.
  • Slice each ciabatta and make a layer of spinach leaves followed by half of the pesto, finally top with half of the halloumi.
  • Enjoy while the halloumi is still warm!
