- 200 grams baby salad leaves
- 150 grams watermelon
- 100 grams feta
- 2 pickled shallots sliced
- 3 tbsp balsamic glaze
- 2 tbsp micro greens
Toss the salad leaves with the pickled shallots and half of the feta. Place onto the centre of your plate.
Add the watermelon cubes and remaining feta before drizzling with the balsamic glaze.
Finish with the micro greens and serve.
