This Vegan Bacon Hash makes the perfect breakfast, brunch, lunch or dinner. Top with gherkins and American mustard for a hearty meal.

  • 2 tbsp vegetable oil
  • 250 grams potato skin on, cut into 1 inch cubes
  • 1/2 large white onion diced
  • 2 cloves garlic minced
  • salt and pepper to season
  • 8 rashers vegan bacon cut into 1 inch pieces
  • 2 pickled cucumbers sliced
  • American mustard to serve
  1. Heat the oil in a heavy bottomed frying pan until you can feel the heat rising above the oil.

  2. Add the potatoes to the pan making sure they aren't too crowded (they should all be touching the bottom of the pan - cook in batches if this wouldn't otherwise be possible).

  3. Cook the potatoes on a medium to high heat so that they sizzle.

  4. Do not stir the potatoes until they have begun to brown underneath.

  5. Turn occasionally until all sides have begun to brown.

  6. Add the onion to the pan along with a pinch of salt, the minced garlic and the vegan bacon.

  7. Continue to cook on a medium heat for 5-10 minutes or until the onion has softened and the vegan bacon is cooked through.

  8. Season well and serve while still hot by scattering the sliced gherkins on top and with a squirt or two of American mustard.
