This simple hummus recipe will be a staple in your fridge! Customise it with your favourite herbs and spices.

  • 400 grams chickpeas drained but keep the water to one side (aquafaba)
  • 100 millilitres olive oil
  • 2 cloves garlic
  • 1 lemon juice and zest
  • 4 tbsp tahini
  • 0.25 tsp salt
  • 1 pinch cracked black pepper
  • 1 tbsp pine nuts toasted
  1. Add the chickpeas to a blender along with 75 millilitres of the oil, garlic, lemon, tahini and about 50 millilitres of the chickpea water (aquafaba).

  2. Blitz on high until smooth and creamy.

  3. Season to taste and add a little more aquafaba until your desired consistency is achieved.

  4. Serve with the remaining oil drizzled on top and a sprinkling of toasted pine nuts (optional).
