Ingredients
  • 2 bananas
  • 2 tbsp sunflower oil for the batter
  • 2 tsp lemon juice
  • 0.5 tsp cinnamon
  • 1 pinch nutmeg
  • 200 grams self raising flour
  • 400 ml oat milk
  • 1 tsp sunflower oil to grease your pan
  • 2 handfuls fresh fruit optional, to serve
  • maple syrup optional, to serve
Instructions
  1. In a large bowl, mash the bananas with a fork before whisking together with the oil, lemon juice and spices.

  2. Add in the flour and beat well until you have a thick paste.

  3. Slowly add in the milk whisking well in between each addition.

  4. Once the mix is fully combined and smooth, grease your pan with the tsp of sunflower oil.

  5. Heat the pan on a medium heat until hot.

  6. Ladle the batter onto the pan and swirl to make a circle.

  7. Cook for roughly 2 minutes until bubbles begin to appear on the surface of the pancake.

  8. Using a spatula, carefully flip the pancake and cook for another 2 minutes.

  9. Transfer to a warm plate while using up the rest of the batter.

  10. Once you have cooked all of the batter, serve the pancakes warm with your favourite fruits and a drizzle of maple syrup.

Recipe Notes

Variations

Add chocolate chips to the batter before cooking for bursts of molten chocolate in each mouthful.

For real choco-holics, swap 50g of flour for dairy free cocoa powder and add chocolate chips to the batter before cooking.
