Meal Planning Monday

It’s been a while since I’ve taken part in Meal Planning Monday. We’ve been incredibly busy and eating out a lot so it had seemed pretty pointless sharing takeaway and restaurant suggestions. Take last week: on Monday I went home to Stevenage for a church event, Tuesday I was out at drinks with work, Wednesday was the cinema with a friend, Thursday and Friday we spent at home but then the weekend was a busy one seeing Jon’s family on the Saturday and mine on the Sunday. Not a lot of time for cooking…my kitchen must be feeling neglected!
This week is looking to be much more calm. I’m at a Christmas Press Event on Thursday but other than that I intend to be at home most evenings! This is what I will be cooking…
Meal Planning Monday
Monday
Easy Roasted Tomato Soup – after a few health issues and hectic home lives, we had fallen off of the healthy eating bandwagon but fresh soups will help us get back on track!
Tuesday
Spaghetti and Veggie Meatballs – a simple dinner that never disappoints.
Wednesday
Chilli Con Carne served with rice, salsa and fresh avocado. Yum!
Thursday
Out at press event – I’ll probably nip to Hummus Bros on my way to the event.
Friday
Lentil Lasagne – this is one of our favourites so the perfect Friday night treat.
Saturday
Takeout – we are at a gig Saturday evening (NOFX and Alkaline Trio if you are interested) so we’ll grab something naughty on our way.
Sunday
Hot-dogs and Hamburgers – Sunday evening we are going to Alexandra Palace Drive in Movies to see The Goonies! I’m super excited about ordering hot-dogs and popcorn from the waitresses on roller skates.

Looks like quite a good week for food, I attempted to plan my meals out before, but work meant that went out the window pretty quickly
Thanks Stephen! I know that feeling. We try to have at least half our options easy things like soup now to try and get around pesky work schedules!

Hi Alice thanks for stopping by. Hummus Bros is ace! They serve a bowl of hummus with all sorts of interesting toppings, braised meats, roasted veggies, falafel, fava beans. Oh and with pita and tabbouleh too. Yum! I’m glad you like the soup too. It’s a favourite in our house!
