It is Monday again – is anyone else a little bit scared at just how quickly this year is going? I have no idea where the time has gone. It seems like yesterday we were ringing in the new year.
I’m trying to slow things down a bit in an attempt to take control of my life again because ever time I take my eye off of the ball I seem to lose another week or two.
The menu for this week isn’t particularly exciting but its got a good mix of convenience food, leftovers and trying the odd new recipe. It should also help me reach my target of losing a stone in 8 weeks. I weighed in today and have just 2.5lbs to lose if I am going to meet my target by next Sunday. Keep your fingers crossed for me!
So without further a-do this week we will be eating:
Monday – leftover chilli from our Tex Mex dinner party that we hosted at the weekend. (There are LOADS of recipes to share including Largeritas, Cool Mango Salsa, Traditional Tomato Salsa, Pulled Pork, Beef Chilli and more!)
Tuesday – Covent Garden Soup
Wednesday – a ready meal from Cook.net, the ultimate convenience food without the guilt.
Thursday – Black Bean Soup – a new recipe that I will hopefully be sharing soon.
Friday – Eating out with friends
Saturday – to be decided – hopefully something fun but healthy!
Sunday – buffet at our friend’s birthday party.
Hopefully there’s nothing too naughty there which will jeopardise making my target. I’ve deliberately left Saturday clear so that we can have a bit more flexibility and decide what we want on the day.
