Spiced Berry Porridge

Snuggle up on Christmas morning with a steaming, creamy bowl of spiced berry porridge.

Ingredients

For the compote

  • 100 g mixed berries
  • 1 tbsp orange juice
  • 1/4 tsp cinnamon
  • 1 star anise

For the porridge

  • 50 g jumbo oats
  • 300 ml milk
  • 1 pinch salt

Instructions

To make the compote

  • Add the fruit, orange juice, sugar and spices to a saucepan and place on a medium heat.
  • Stir until the sugar has dissolved.
  • Turn the heat up high until the liquid starts to simmer, stirring regularly until the berries start to burst.
  • Place to one side while you make the porridge.

To make on the hob

  • Add the oats to a saucepan along with the milk and salt. 
  • Bring to the boil and simmer for 4-5 minutes, stirring regularly to make sure it doesn't stick to the bottom of the pan and to help the oats break down.

To make in the microwave

  • Mix the porridge oats, milk or water and a pinch of salt in a deep microwaveable bowl. 
  • Microwave on 'high' for 2 and a half minutes.
  • Remove the porridge from the microwave and stir well.
  • Place back in the microwave and heat on 'high' for another 2 minutes.
  • Let the porridge stand for a minute before serving.

To serve

  • Spoon the porridge into a bowl and top with the berry compote.
