Indian Chickpea Salad
Indian Inspired Chickpea Salad

Ingredients
  • 240 grams chickpeas cooked, drained weight
  • 20 cherry tomatoes quartered
  • 2 small peppers diced
  • 1/2 large cucumber diced
  • 4 spring onions sliced
  • 1 large bunch coriander finely chopped
  • 2 tbsp curry leaves finely chopped
  • 1 tsp chilli flakes
  • 4 tbsp lemon juice
  • 2 tbsp flax seeds
  • salt to taste
  • ground pepper to taste
Instructions
  1. In a large bowl, combine the ingredients and toss together until all are coated in the spices and lemon juice.

  2. Serve alongside onion bhajis or tandoori grilled meats.
