It’s funny how until you start food blogging you don’t necessarily realise just how many feast days and foodie celebrations exist out there. Cinco de Mayo is one of those days that until I started blogging would have simply passed me by.

These days it’s a good excuse to chow down on some of my favourite food – Mexican food. It’s no secret that I love Mexican flavours and in the past I’ve shared all sorts from Beef Barbacoa to Roasted Red Pepper and Sweet Potato Quesadillas. When Cinco de Mayo recipes started popping up on my Pinterest feed I thought it was about time I shared another Mexican inspired recipe.

Adding alcohol to the celebrations

I’ve said it before and I’ll say it again, a celebration isn’t a celebration without a cheeky cocktail. I don’t want to sound like an alcoholic but some occasions just call for a boozy drink whether that’s a glass of champagne, a gin and tonic or a cold pint of cider.

It makes sense to me that Cinco de Mayo should be celebrated with a margarita. (Especially as this year it falls on a Friday) Are you with me?!

A classic margarita is a thing of beauty when done well. As ever I couldn’t stop myself from having a play around with this classic cocktail and I’ve come up with my own Mango Margarita recipe. It pairs the sweetness of the mango with the tang of lime and the heat of tequila. This cocktail wouldn’t be complete without a rim of salt but I added a little chilli for an extra kick!

These zesty mango margaritas are the perfect drink to serve alongside a Mexican feast!

Ingredients
 
 

  • 1/2 tsp salt
  • 1/2 tsp chilli powder
  • 3 tbsp agave nectar
  • 150 millilitre tequila
  • 2 limes juice only
  • 1 large mango ripe
  • 4 cups of ice
  • 1 lime to garnish

Instructions
 

  • Mix the chilli and salt on a plate.
  • Rub the rim of each glass with a little of the agave nectar.
  • Dip the agave rubbed rims into the chilli and salt mix and place to one side.
  • Pour the agave nectar, tequila and juice of the limes into a blender along with the flesh of the mango and the ice.
  • Blitz on high until the desired texture has been reached.
  • Pour into the chilli and salt rimmed glasses.
  • Garnish with a wedge of lime.
