Fat Elvis Brownies stuffed with banana, pretzels and peanut butter

Take inspiration from the King with these fat Elvis brownies, stuffed to the max with gooey peanut butter, salty pretzels and sweet banana.

All hail the King!

I’ve got something seriously special for you today – think you know brownies? Well think again! Brownies are known for being a really decadent bake but by taking Elvis as inspiration you end up with something truly over the top.

Salty peanut butter with sweet banana, are balanced out with bitter chocolate and topped off with crunchy pretzels to make one seriously ooey-gooey brownie.

How to make Fat Elvis Brownies

Although there are lots of ingredients in this recipe the steps aren’t all that complicated.

You need to do all of the usual things like pre-heating your oven and lining your cake tin.

To make the actual brownie batter:

  • Melt the butter in a pan along with the chocolate and sugar. Once melted completely, allow to cool slightly.
  • Once the butter and chocolate mixture is cool, whisk in the eggs, one at a time.
  • Next, fold through the flour and cocoa with a pinch of salt and the chopped peanuts.
  • Pour half of the brownie batter into the tin. Spoon the peanut butter over the batter until it is all covered. Pour over the remaining half of the batter being careful to make sure you don’t disturb the peanut butter underneath.

Once the batter has been made and poured into the tin, the brownies should be baked in the centre of the oven for 25 minutes or until a crust has formed and they are bouncy to the touch.

When fresh out of the oven, spike the top of the brownies with the pretzels and banana chips.

Allow to cool slightly before slicing and serving. 15 minutes is usually long enough.

Serving suggestions

I know a warm brownie is a better brownie but you can always give them a quick blitz in the microwave to warm them up again once they are out of the pan!

When warm, the best way to serve them is with a big dollop of vanilla ice cream.

These Fat Elvis Peanut Butter Brownies are truly fir for the King!

Other Fat Elvis Puds

You may have come across Fat Elvis Pie (the Hoosier Mama recipe is my favourite), Fat Elvis Cakes (this one includes bacon!), and perhaps even Fat Elvis Cheesecake (check out this amazing version from The Kitchn).

The one thing they all have in common is that they celebrate some of the King’s favourite foods – chocolate, banana and peanut butter. (No, I wasn’t going to make a cheese burger brownie, be serious!) Fat Elvis recipes (as they are affectionately known) also often include pretzels and sometimes bacon too! Now, I don’t know about you but I don’t hear anything bad in that list of ingredients!
