Morning all! It’s me again. Last week’s meal plan went a little bit off piste… I’ve been unwell so my plans for going out were quickly scuppered. You may have seen this meme on the Supper in the Suburbs Facebook Page which totally sums up our week last week.
We had to find extra dinners which I could stomach which wasn’t all that easy as I really lost my appetite. This week, we’re trying to make the most of vegetables we’ve got leftover from last week’s abandoned meal plan. Second time lucky?
Our Meal Plan – w|c 19 October 2015
We recently discovered Sharwood’s new stir fry melt-pots. We’ll be frying up a quick Szechuan Stir Fry with Tofu and Tenderstem Broccoli.
Hopefully on Tuesday evening I’ll be meeting my friends for dinner who I sadly had to cancel on last week.
On Wednesday we’ll be having a simple mid-week roast. Jon will whack a nut roast in the oven which we’ll serve up with steamed carrots, cabbage and creamy mash potatoes with lashings of gravy.
After a big meal on Wednesday we’ll make do with a roasted red pepper soup on Thursday. Jon always picks up a fresh loaf of bread from a bakery on his way home so it still feels like a treat!
Friday nights are and should always be curry nights. I’m going to head to Borough Market on my lunch break to buy some weird and wonderful seasonal veggies to pack out a healthy vegetarian curry.
We are heading to a pumpkin patch in Surrey on Saturday – watch this space as I’ll be uploading plenty of photos I’m sure. On Saturday nights in we like to do something a little special for dinner. This week we’re having vegetarian enchiladas.
After a lazy day we’ll be looking for a lazy dinner. This Mushroom and Walnut Tart makes the most of ready made ingredients like puff pastry and mushroom pate but boy it tastes good!
