Meal Planning Mondays 6 July 2015

I’m joining in again with Meal Planning Monday this week, originally started by Mrs M with At Home from Mrs M. I feels so much more content when my life is all organised so I’m pleased to be posting regular meal plans again!

This week things are a little more calm. I’m eating out with friends just once, and don’t have any other weekday evening plans which means Jon and I can head out for dinner just the two of us as a treat!

We are spoilt for choice in Southgate with two new restaurants having opened up in the last few months. But, before we can try them out there’s one restaurant we still haven’t tried which is one of the most popular in the area – Thalassa. We’ll be heading there on Friday. It specialises in seafood so I’m quite excited! Fish is the one thing that stops me going vegetarian!

Monday –  Mexican Quinoa Casserole (a new recipe I’m developing)

Tuesday – Dinner out with friends

Wednesday – Peanut Soup (another recipe I’m currently working on!)

Thursday – Lentil Lasagne (because its our favourite)

Friday – Dinner at Thalassa, Southgate

Saturday – Visiting family

Sunday – Visiting family

  1. Oh I’ll be interested to see your recipes for the Mexican Quinoa Casserole and Peanut Soup!! That definitely sounds a little different, I love peanuts, any nuts actually, but peanuts especially 🙂
    I’m in agreement about the fish, we had loads of fish on the BBQ this weekend and everyone agreed it was so much nicer than the usual meat feast!

    1. Thanks Mother Mands. Quinoa Casseroles are one of my favourite things at the minute. I have another recipe for a Broccoli Quinoa Casserole on the blog already which is delicious. This however is something a little different!

  2. I love the idea of lentil lasagne. Lasagne always goes down well in our house so it would be nice to try a variation that doesn’t involve meat. #mealplanningmondays

    1. Oh heather you have to try it! You will love it I promise. Lasagnes are such comfort food I don’t think you can go wrong with any variation and we sure don’t miss the meat in our house 🙂

    1. Thanks Kim. I adore soup. Always good when I’m trying to lose weight and this is a real favourite. Il have to me sure the recipe goes up soon! But soup is hard to photograph!

  4. Really looking forward to seeing the recipe for the peanut soup. I love soup anyway, so this sounds really intriguing. And as for the lentil lasagne, I’ve just popped over to the recipe and I think I’ll be cooking it myself soon.

    1. Thanks Alison! It really is delicious. Such a smooth, silky soup! (I hate lumpy soups with a passion…) Glad you like the look of the lentil lasagne. If you do make it let me know how you get on. I’d love to see pictures too!!!
