Meal Planning Mondays

Meal Planning Mondays #3

It is Monday again – is anyone else a little bit scared at just how quickly this year is going? I have no idea where the time has gone. It seems like yesterday we were ringing in the new year.

I’m trying to slow things down a bit in an attempt to take control of my life again because ever time I take my eye off of the ball I seem to lose another week or two.

The menu for this week isn’t particularly exciting but its got a good mix of convenience food, leftovers and trying the odd new recipe. It should also help me reach my target of losing a stone in 8 weeks. I weighed in today and have just 2.5lbs to lose if I am going to meet my target by next Sunday. Keep your fingers crossed for me!

So without further a-do this week we will be eating:

Monday – leftover chilli from our Tex Mex dinner party that we hosted at the weekend. (There are LOADS of recipes to share including Largeritas, Cool Mango Salsa, Traditional Tomato Salsa, Pulled Pork, Beef Chilli and more!)

Tuesday – Covent Garden Soup

Wednesday – a ready meal from Cook.net, the ultimate convenience food without the guilt.

Thursday – Black Bean Soup – a new recipe that I will hopefully be sharing soon.

Friday – Eating out with friends

Saturday – to be decided – hopefully something fun but healthy!

Sunday – buffet at our friend’s birthday party.

Hopefully there’s nothing too naughty there which will jeopardise making my target. I’ve deliberately left Saturday clear so that we can have a bit more flexibility and decide what we want on the day.

Have you planned your meals this week? Are you trying anything new and adventurous, or are you sticking to some tried and tested favourites like we are?

    1. Hey Jess! I’m nosey like that too hahaha. There’s a whole group of us that share our meal plans with the hashtag #mealplanningmonday there’s also a link up and Facebook group! If you do start planning your meals I’m sure your evenings will be less stressful and no doubt you’ll save money too. It’s win win 🙂 thanks for stopping by!

    1. Hey thanks for stopping by! It’s really helped us spend less and cut down on waste. Almost nothing goes in the bin now. I’d highly recommend it 🙂 its also fab if you’re trying to watch your weight as you know what you’re looking forward to at dinner and aren’t tempted by naughty takeaways!

    1. Hey Dungarees and Donuts 🙂 I started doing this when I was at uni for that same reason. There may be some meal planning Mondays from 2011 on the blog somewhere along with lots of other tips! Do look around 🙂 xx

    1. Thanks Kerry. 2.5lbs to lose feels like a lot but I’m hoping my plan for this week is healthy enough. I also over eat when I don’t plan ahead. I think having something to look forward to is half the battle when dealing with cravings x

    1. Hi Kirsty! Thanks for dropping by. I think we all need a bit of spontaneity in life so keeping Saturday clear certainly helps 😀 also I’m hoping that my chilli is going to be even more awesome cooking for the second time – some seriously smokey chipotles went into it so it should be even tastier now!

    1. Thanks Becca! I don’t feel guilty when I buy from Cook because the food really is delicious!!! We all need a helping hand every now and then. Thank go for Cook!

    1. Thanks Foodie Quine! I’m going to be posting a whole host of recipes and how-tos from my tex mex night over the next fortnight so watch this space 🙂 I haven’t been planning for the last few weeks but felt it was time to get organised again! A bit of a personal spring clean…
